Black & White

A delicious dry cocktail made with our unaged ‘white’ Pure Single rum, and Blackthorn Scottish sea salt.

Ingredients:

  • 50 ml Ninefold Pure Single Rum (use Cask Aged for added luxury)

  • 15 ml freshly squeezed lemon juice

  • 15 ml fino sherry

  • 15 ml 2:1 pineapple syrup*

  • 2 dashes orange bitters

  • pinch of Blackthorn salt

Method:
Add all ingredients to a small highball glass 3/4 filled with crushed ice. Swizzle/stir, top with more ice and garnish with a pineapple chunk and skewered cherries.

Pineapple syrup

  • 300 g fresh pineapple

  • 225 g cane sugar

  • 100 ml water

Chop up a ripe pineapple into chunks, not including the skin or core. Put into a pan, cover with the sugar, and leave overnight. The next day, over a low/medium heat, add the water to the pan to dissolve the syrup that’s been extracted overnight. Strain, bottle and pop in the fridge until you need it.
